About me

I trained as a chef and spent years working in fast paced commercial kitchens. Food was always going to be part of my life, but over time I realized something was missing in those kitchens. Reading Darina Allen's Forgotten Skills of Cooking around the time my first child was born changed my direction. I wanted my hands in the dirt and my food connected to the land, the way it was when I was a kid picking mushrooms and digging clams on the beach during summers with family in Nova Scotia.

What I do

I'm the Operations Manager at Silvercore Outdoors, Canada's largest private firearms training company. I keep the day to day running behind our courses, our members, and the systems that support them. I also spend time with students in our hunting education courses, where the conversation almost always turns to food. I'm the first to tell people that hunting is not a money saving venture. You do it for the connection, the capability, and the quality of what ends up on your table.

The Wild Kitchen

I host The Wild Kitchen, a Silvercore podcast about food, hunting, foraging, fermenting, and everything harvest to table. My guests have included Elias Cairo, founder of Olympia Provisions; chef and butcher Jesse Griffiths; Jeff Senger of From the Wild; and Alaskan bush pilot and backcountry hunter Tana Grenda. The goal of every conversation is the same: help people feel more self sufficient and take greater control over the food they eat.

Hunting and wild food

I hunt, and I cook what we harvest. Wild game is my favourite thing to work with because you never quite know what you're going to get. I cure and smoke our own bacon, keep a full butchery setup at home, and spend as much time as I can foraging and fermenting. Time outside builds confidence and capability, and I have watched that happen in my own family.

Family

Travis and I have known each other since we were teenagers. Silvercore is a family business in the most literal sense: our kids have grown up around the courses, the podcast, and the outdoors.

The Silvercore Club exists to help people get outside safely and thrive out there. The Club is an approved shooting club under the Firearms Act, and membership satisfies the club membership conditions associated with restricted firearms transfers and Authorizations to Transport. Members are served across Canada and internationally.
